2、宮保雞丁

宮保雞丁(Kung Pao Chicken),是一道聞名中外的特色傳統名菜。魯菜、川菜、貴州菜中都有收錄,原料、做法有差別。

該菜式的起源與魯菜中的醬爆雞丁,和貴州菜的胡辣子雞丁有關,後被清朝山東巡撫、四川總督丁寶楨改良發揚,形成了一道新菜式——宮保雞丁,並流傳至今,此道菜也被歸納為北京宮廷菜。之後宮保雞丁也流傳到國外。

3、魚香肉絲

魚香肉絲(Yuxiang shredded pork(sauteed in spicy garlic sauce),是一道漢族特色傳統名菜,以魚香味調味而得名,屬於川菜。相傳靈感來自泡椒肉絲,民國年間則是由四川籍廚師創制而成。

魚香肉絲是一道常見川菜。魚香,是四川菜餚主要傳統味型之一。成菜具有魚香味,其味是調味品調制而成。此法源出於四川民間獨具特色的烹魚調味方法,而今已廣泛用於川味的熟菜中。

4、水煮肉片

水煮肉片(Poached spicy slices of pork),是一道地方新創名菜,起源於自貢,發揚於西南,屬於川菜中著名的家常菜。因肉片未經劃油,以水煮熟故名水煮肉片。

水煮肉片肉味香辣,軟嫩,易嚼。吃時肉嫩菜鮮 ,湯紅油亮,麻辣味濃,最宜下飯,為家常美食之一。特色是「麻、辣、鮮、香」。
